LONG TIME BRAT FAMILY FAVORITE!!!!!
Ingredients:
5 potatoes, baked, peeled and mashed
(I microwave and ice bathe, peel and mash with
Cream, Butter, salt, pepper)

1 regular package uncooked bacon, (cooked crispy then chop and reserve half)
1 medium onion, diced
1/4 bunch celery, diced
1 tablespoon minced garlic (optional)
6 cups chicken broth
1 teaspoon salt
1 teaspoon black pepper

Pinch onion powder
Pinch garlic powder
Pinch dried or fresh chives
Pinch dried parsley (optional)
6 tablespoons of butter for mash
2 tablespoons butter for roux (if needed)
1/2 cup flour

***For garnish:***
Shredded cheese
1/2 of the fried bacon bits
chopped green onions

Directions:
Bake potatoes cool and peel, then mash w/ butter, cream, salt & pepper and set aside.

Bake potatoes cool and peel, then mash w/ butter, cream, salt & pepper and set aside.
In sauté pan or large pot , cook package of bacon until crisp and place on paper towel over plate to drain bacon...SAVE THE GREASE!!!
Add onion, celery, and optional garlic to bacon pan/grease over medium-high heat until it is tender, about 5 minutes.
Cook over medium-low heat until mixture bubbles, stirring constantly 2 to 3 minutes to make a roux.
To the large pan, slowly add: 6 cups broth, salt and pepper and seasonings.
Stir constantly while adding liquid to prevent clumps!

Cook over medium-high heat until mixture is very hot, about 8 minutes, stirring often.
Season to taste (remember it should be strongly flavored as the potatoes will dramatically lessen flavors)
Add, 1/2 of chopped bacon(save the remainder for garnish)
Add reserved mashed potatoes. Stir well. Turn heat to simmer, .
Do not let mixture boil (*if too thick feel free to slowly add water, broth or milk to desired consistency)

Garnish with sour cream, cheese, chopped bacon bits, green onions or all three.
Serve hot with buttered french Bread and Enjoy!
